So this snack is a little more involved then the other snacks I've posted, but it's worth it in the end. Now I'm not one for spicy food either, but these aren't too bad. And really, if you put enough cream cheese in something, it's not going to be too hot. I've never been one to turn down a jalapeno popper, but the other day, I asked myself if I could make them even better. The answer was yes, with sharp cheddar cheese!
What you'll need:
4 oz. soft cream cheese
1/3 c finely grated sharp cheddar
1/4 c milk
about 2 c breadcrumbs
about 1/2 c vegetable oil
What you gotta do:
Slice stems off jalapenos, then slice them lengthwise on just one side. With a spoon scrape out insides, especially all the seeds. Set them aside. Mix together cream cheese and cheddar. Stuff the jalapenos with the cheesey mixture. I like to use my hands here and really fill them up. Make sure to squish the slit of the jalapeno together to seal in the cheese. Set them aside again. In one bowl whisk the eggs and milk together, and in another bowl pour in the breadcrumbs. One at a time, dip a jalapeno into the egg mixture, then coat it in the breadcrumb mixture. Repeat this again to all the jalapenos. That's the trick to a good coating, do it twice.
Heat oil (you want about a 1/4 inch of oil in your pan) over medium heat until hot. Place jalapenos in and fry for about 4 minutes on each side. Remove from oil and drain on paper towel. Let sit for about 5 minutes before serving, or you will burn your tongue.
