snack time: chevre deviled eggs

Oh man, are these good. They are extremely rich and creamy. And really pack a goat cheese punch.

Hard boil 6 eggs. Let them cool completely. Peel off shells. Slice eggs lengthwise. Pop yolks into a bowl and mash them up with a tablespoon of olive oil, about a 1/4 cup of goat cheese, and a dash of salt. Plop the mixture back into the eggs and sprinkle with smoked paprika. As I was eating these, I thought they would be perfect with a little garnish of chives, but alas I didn't have any.
