Ok, so this isn't exactly a snack per se, it's more of side. But it's awfully delish.
Cook up a cup of couscous. Before the water starts boiling though, add a little olive oil, the zest of one lemon, and salt. While that's cooking, slice up a pound of brussel sprouts. You'll want to slice off the bottoms, then cut lengthwise. Saute the sprouts in a little olive oil over medium heat, until the outside leaves start to get crispy, about 10 minutes. Toss together couscous and sprouts with the juice of one lemon, and a little more salt to taste.
